My Crock-Pot Motto: Set it and forget it! then Eat it! #ChickenDotCa


To be honest, I completely forgot I owned a crock-pot until Chicken Farmers of Canada challenged me to make a recipe using one. And man am I grateful for that... I completely forgot how much I love my crock-pot!
My Crock-Pot Motto ( say it with me )... "Set it and forget it! then Eat it!"
You know me and challenges... takes me all of 3 seconds to say "bring it on!"
I settled in pretty quick with my recipe of choice: Chicken & Sweet Potato Stew. I'm a big fan of stews. Especially this time of year when the days start to get shorter, nights longer and the temperatures start to dip. Nothing like a hearty stew to warm you up all over from the inside-out.
A Meal in Pictures (or, the Crock-pot play-by-play)
I'm going to be completely transparent with you. I chose this recipe because all I had to do was chop, slice and dice and throw it in the crock-pot, put it on high and walk away... seriously! How epic is that?

Below are the exerts (slightly modified for my rendition of this dish) as listed on the Chicken.ca website.
What you are going to need to make this recipe:
- 4 cups (1 L) sweet potatoe(s), peeled and cubed
- 2.5 lb (1 kg) skinless chicken breasts
- 2 cups (500 mL) brown mushrooms, fresh, sliced
1 cup (250 mL) red onion(s), diced
- cloves garlic, minced
- 1 cup (250 mL) chicken broth
- 1/2 tsp (2.5 mL) rosemary, dried
- 1/4 tsp (1.25 mL)
- 1/4 tsp (1.25 mL) black pepper, freshly ground
- 1 cup (250 mL) green peas, frozen
- 2 tbsp (30 mL) parsley, minced, for garnish
Step by step instructions for Chicken & Sweet Potato Stew:
- Peel sweet potatoes. Cut in half and then into cubes about 2 inches (5 cm) each. Add to the bottom of the crock of slow cooker.
- Top with 2 sliced chicken breasts.
- Slice mushrooms, dice onions and mince garlic. (I went with Garlic chunks tho) Scatter over chicken and sweet potatoes.
- Pour over chicken broth and sprinkle with dried rosemary, salt and pepper.
- Cover and cook on LOW 6-8 hours (HIGH 3-4 hours). Thirty minutes before completion scatter over frozen green peas. Cover and continue cooking.
- To serve, place chicken and sweet potatoes on a platter. Scatter with chopped parsley. Pour juices into a dish and serve on the side as au jus.
- Then, EAT IT!
